2 cups fish

1 tablespoon butter

1 teaspoon parsley

1 teaspoon worchestershire sauce

1 quart chicken stock

 

1 tablespoon flour

2 cups hot milk

2 tablespoons cracker crumbs

1/2 teaspoon salt

dash cayenne

mince the fish,add it to the butter,chopped parsley worchestershire sauce,and stock.bind with the butter and flour cooked together,add the milk,cracker crumbs,and seasoning. Christmas fruit cookies

1/2 cup of lard

1/2 cup of butter

1 cup of sugar

2 beaten eggs

1/2 cup of milk

2 cups flour

1/2 teaspoon soda

3/4 cup currants

3/4 cup raisins

2 cups rolled oats

cream the butter and lard add the sugar, eggs ,milk, flour, soda,currants,raisins,and rolled oats,mix ,drop a teaspoon at a time in unbuttered pans and bake in a slow oven at 350 degrees.

#coffee tapioca 1908

3 cups coffee infusion

1/2 cup minute apioca

1/2 cup sugar

salt

1 teaspoon mexican vanilla

cook tapioca in coffee fifteen minutes with sugar and salt.flavor with vanilla,and serve cold with cream and sugar.

Boiled coffee from 1908

4 cups of ground coffee

1 quart fresh boiling water

1 white of egg

mix the white of egg with 3 tablespoons cold water beating with a fork;add the coffee and stir till wet.scald coffee put in prepared coffee pour in boiling water

cover the spout abd boil five  minutes.pour in quickly 1/4 cup cold water stand three minutes to settle.strain into a hot pot.

Vintage coffee custard recipe from 1908

4 eggs

1/2 pint cream

1 cup sugar

1 pint milk

1/2 pint strong coffee

Scald the milk.beat the eggs and sugar together until light:add them to the hot milk,cook,and instantly take from the fire,add the cream and coffee.when cold freeze.

8 cups of water

2 cups sugar

1 cup of coffee

1 white egg

put the coffee in a farina boiler,pour boiling water over it,stir occasionally five minutes,then strain through the fine muslin,add the sugar,and stir till dissolved.when cold,add the white egg unbeaten,and freeze to the consistency of wet snow,serve in punch glass.Tea frappe may be made in the same fashion
